Taco Soup

A few years ago my friends mom made some taco soup and brought it to a gathering that we had. I had never had it before but was instantly in love with it. I had to get the recipe from her. I love tacos but with my kids still so small they have a hard time eating them without making a gigantic mess. For us, Taco Soup has become an easy alternative and in my opinion tastes just as good as a taco! It is a really simple and easy meal to make and also is great as leftovers.

Taco Soup
Ingredients:
1 lb hamburger or turkey
1 package taco seasoning
1 green pepper- chopped
1/2 yellow onion- chopped
10 oz can Rotel diced tomatoes and green chilies
4 oz can chopped green chilies
15 oz can tomato sauce
15 oz can diced tomatoes
15 oz can corn- drained
15 oz can pinto beans- drained and rinsed
15 oz can black beans- drained and rinsed
15 oz can light red kidney beans- drained and rinsed
Directions:
In a large pan brown meat.  Once cooked add in chopped pepper and onion. Saute a few minutes until onions are translucent. In a large pot add tomato sauce, taco seasoning, diced tomatoes, chilies, corn, beans, and hamburger meat. Simmer on low heat for 30 minutes. Garnish with cheese, sour cream, and cilantro. Serve with tortilla chips.
