Carrot Bread

Carrot Bread
1 Cup Sugar
1 Cup Brown Sugar
1 Cup Canola oil
3 Eggs
2 1/2 Cups grated carrots
1 tsp Vanilla
2 1/2 Cups flour
3 tsp Cinnamon
1 tsp Salt
1 tsp Baking powder
1 tsp Baking soda
nuts optional
Cream cheese filling
1 8oz block cream cheese softened
1/3 Cup Sugar
1 egg
1 TBSP Flour
Beat ingredients together and set aside

Crumb topping
3 TBSP Butter
1/3 Cup Brown Sugar
1/4 Cup Oats
1 tsp Cinnamon
1/3 Cup Flour
Mix together just until crumbly

In a bowl or mixer add sugars, oil, eggs, carrots, and vanilla. Mix together. Slowly add flour, cinnamon, salt, baking powder, and baking soda. Pour half of the mixture into 2 greased standard loaf pans or 2 regular sized and 1 mini disposable loaf pans. Pour cream cheese filling in and pour remaining batter in top. Bake at 350 for 60 minutes.  *****After 15 minutes quickly sprinkle the crumb topping on top and continue baking for the remaining 45 minutes.
